Vegan #Macaroni #and #Cheese
This vegan macaroni and "cheese" is so creamy and delicious, no one will miss the dairy! You can make this with a few simple pantry staples, no vegan cheese or nutritional yeast required.

Produce
- 1/3 cup Carrots
- 1 clove Garlic
- 1 Russet potato, medium
- 1 Yellow onion, small
Condiments
- 1/4 tsp Dijon mustard
Pasta & Grains
- 8 oz Macaroni (regular or chickpea noodles)
Baking & Spices
- 1/4 tsp Black pepper
- 1 tbsp Olive oil or avocado oil
- 1 tsp Salt
Liquids
- 1 cup Cooking water
Other
- ⅓ cup cashews (raw or roasted is fine)
