These healthy Greek Potato Skins are baked until crispy then topped with roasted garlic hummus and fresh veggies! We love ours with avocado, tomato, cucumber, and a kiss of feta cheese - delicious!





Ingredients
Vegetarian, Gluten free
∙ Makes 10 potato skins

  • 1 Avocado
  • 1/4 cup Cucumber
  • 1/2 Lemon or lime, small
  • 1 Microgreens, fresh
  • 2 tbsp Parsley, fresh
  • 1 Red onion
  • 5 Russet potatoes, small
  • 1/2 cup Tomato
Condiments
  • 10 oz Sabra roasted garlic hummus
Baking & Spices
  • 1 Kosher salt or sea salt
  • 1/4 cup Pepper
Oils & Vinegars
  • 1 tsp Olive oil
Dairy
  • 1 Feta
