Carrot #Orzo
This light and creamy one-pot carrot orzo gets it's creaminess from veggie broth and parmesan (no cream!) and is a delicious vegetarian side dish to serve with dinner tonight!

Ingredients

- 2 cups Carrots
- 3 Carrots
- 1/4 cup Chives, fresh
- 3 cloves Garlic
- 1 Onion, medium
- 1 Optional fresh parsley
- 1/4 tsp Thyme, dried
Canned Goods
- 2 1/2 cups Vegetable broth, low-sodium
Pasta & Grains
- 2 cups Orzo pasta, dry
Baking & Spices
- 1/2 tsp Black pepper
- 1/2 tsp Salt
- 1 Salt and pepper
Dairy
- 3 tbsp Butter, unsalted
- 1 tbsp Butter
- 1 cup Parmesan cheese
Liquids
- 2 1/2 cups Water
