Carrot #Orzo


This light and creamy one-pot carrot orzo gets it's creaminess from veggie broth and parmesan (no cream!) and is a delicious vegetarian side dish to serve with dinner tonight!






Ingredients
Vegetarian

Produce
  • 2 cups Carrots
  • 3 Carrots
  • 1/4 cup Chives, fresh
  • 3 cloves Garlic
  • 1 Onion, medium
  • 1 Optional fresh parsley
  • 1/4 tsp Thyme, dried
Canned Goods
  • 2 1/2 cups Vegetable broth, low-sodium
Pasta & Grains
  • 2 cups Orzo pasta, dry
Baking & Spices
  • 1/2 tsp Black pepper
  • 1/2 tsp Salt
  • 1 Salt and pepper
Dairy
  • 3 tbsp Butter, unsalted
  • 1 tbsp Butter
  • 1 cup Parmesan cheese
Liquids
  • 2 1/2 cups Water
